I suggest you to not read the code yet, since it is a mess for now 
(I am migrating code to the PoW system I am describing here).
And if you had one document to read, I would say Protocol first. You may also read Theoretical part on uCoin website and FAQ, but these documents are to be updated to match the protocol.
